2 x Prime Scottish Sirloin steaks (HD Ferguson, Lochgilphead)
2 x mixed seasonal Veg
1 x 400gm Oven ready hand cut chips
1 x 250gm fantastic combination of green, pink and black peppercorns with a splash of brandy Potts’ sauce.
Bring steaks out of fridge and bring to room temperature before tenderising, rubbing in a little olive oil and seasoning. Heat oven to 200 degrees Celsius. Put chips on a baking tray and into hot oven (these take approx 20 mins). Whilst these are baking, prepare veg and either steam, sauté or boil them. Heat sauce gently in pan or microwave. To cook your steaks pre-heat pan (smoking hot is best) then carefully place steaks in hot pan (medium rare 2-3 minutes each side) but cook to your preference. Let steaks rest for a further 4-5 mins then serve with chips and veg. Pour sauce over or present it as a side. *recipe is only a guide, all cooking appliances vary*
