200gm wedge. Largie Cheese is a Caerphilly style cheese, made in Argyll. It is an Artisan, hand made product from pasteurised milk and vegetarian rennet. The milk is sourced from the Kennedys Largievechtrean farm who have a single herd of Holstein Fresien cows. It is matured for three months. It is sweet on the nose, with a buttery texture, on the palate, there is a hint of lemon, then creamy sweet flavours with an earthy finish.
In the owners words. “Isle of Bute Cheeses started making cheese in January 2019, it had been an idea for a few years after I moved to the Isle of Bute, where I discovered lots of dairy farms but cheesemaking had stopped on the Island in 2010. I went on a cheese making course in the West Highland Dairy and started experimenting. I put down a shipping container on Drumachloy farm where I started producing my first cheese called Largie”.
