KAMES COLD-SMOKED STEELHEAD TROUT- Kilmelford
The Steelhead is the same species as the rainbow trout, but naturally migrates to the sea. It loves the space and volume of mineral-rich Atlantic water to swim against in remote Scottish sea lochs, where it is slow-grown with the highest welfare standards. It turns silvery, and grows big and athletic – this is a lean, oily fish, packed full of Omega 3s, Vitamin D, Vitamin B12, Iodine and Selenium. If you like salmon, you’ll love Steelhead Trout, it’s exceptional for its firmer texture and slightly sweet, more delicate taste.
For the smoke, the fish is hand-filleted and pin-boned by a third-generation family smoker, hand-cured with a dry salt rub, before smoking over retired whisky barrels. There is no brining or additives: the natural sweetness and quality of the Steelhead speaks for itself.
